BagelFest West Exhibitor Spotlight: New Wave Bagel
New Wave Bagel is making waves in Encinitas by offering a fresh take on the traditional bagel with their naturally fermented sourdough creations. The bakery emphasizes the use of local ingredients, resulting in inventive flavors such as brown butter, salted honey, French onion, and cherry cardamom, alongside the familiar classics.
Co-founded by Cheryl Storms and Matt Cardwell, the shop’s approach stands out for its commitment to quality and texture. Unlike the typical “smushy” commercial bagel, New Wave’s sourdough version offers a toothsome bite, giving customers an authentic and memorable experience.
Although the brick and mortar location is still under construction, New Wave Bagel currently serves an enticing selection of bagels, sides of schmears, and pre-prepared specialties, including a notable spanakopita biali. Once fully operational, the bakery plans to expand its menu with an espresso bar, breakfast and lunch sandwiches, and a variety of open-faced options that showcase San Diego’s vibrant local produce, such as fresh heirloom tomatoes and local cucumbers.
Anticipation is running high for the shop’s grand opening and the full realization of their ambitious vision.
